When two of our kids said, “I’m sick of eggs,”I needed to get creative. Here are some of my show stopping ideas that please even the pickiest of eaters. Tried and True, they love all of these recipes.

I have been an official “chicken farmer” for over ten years now.

The problem? Three of our five children have declared “No More Eggs,” and I have had to get creative with my ideas for this most perfect food. Imagine being sick of eggs? I never would have believed it.
I’ve started making Egg Sandwiches that have been a hit and now have developed the easiest trick ever for creating homemade Egg Mc Muffins.

The sandwich pictured above is the plain version, but topped with cheese, a slice of tomato, and a squirt of mayo, my mouth starts watering. Fried eggs with a touch of fried onions on sour dough bread tops the list as one of my favorite sandwiches of all times.
Another amazing On the Go breakfast idea is my Egg and Cheese Puffs.
The perfect breakfast and brunch dish. Not only are they delicious, but I love making extras for "breakfast on the run."
I can’t begin to tell you how good they are. Dense and hearty, you can stuff them with your favorite toppings.

I have been able to stockpile soft burritos after a wonderful coupon and sale event. So, egg burritos have been another way to incorporate eggs into our meal plan. They are healthy and frugal, so I am slowly wooing my children back to where they need to be. We raise chickens, for goodness sake, they can not ban eggs. 🙂

Again, plain, for my daughter,  is pictured above, but we love to put a Mexican twist to our breakfast burritos by adding salsa, cheese, diced tomatoes, green peppers, onions, and…oh my, my mouth is watering.
Yes, creating a breakfast burrito bar is now one of our favorite things for guests.
I think I may go make breakfast for dinner this evening.
During my No Food Waste week, this simple egg salad was made multiple times while I made sure that every hard boiled Easter egg was used wisely.
