The potatoes at the beginning of this newsletter sounded good; also the lasagna skillet recipe sounded great. The picture was New York City right? I noticed someone here said something about the Statue of Liberty.

Were big fans of anything surrounded by potato and eggs. Now that spring is close we can't wait to add in fresh garlic chive, parsley and spinach.

We had potato skillets last night after I read your post and then saw the gigantic bag of potatoes in my kitchen! And it's definitely something that could have enough variation to eat fairly often!

Have fun in NYC! I had to laugh about your comment on leftovers... the other day, I figured out why they called it gumbo..
I had so many leftovers that I threw in and my boys absolutely loved it. and they didn't even know it was all the leftovers in the fridge...
But your breakfast skillet sounds really good, I'll have to try it sometime for hubby! Thanks for a new idea!

I LOVE NYC! I've only been there once, but it was so much fun I would love to go back! You be careful and have a great time. And if you get the chance to go to Junior's on Flatbush Ave, well, take it! Their desserts (cheesecake in particular) are to. die. for!

Good Morning Jen!
We love breakfast skillets at are house too! I usually make them for supper. :o) The other day when I was at the store, I noticed that they have a variety of these bagged up in the freezer section and are fairly expensive. There is nothing to them, but I was thinking I would try to make some kits up to have in my freezer during my next bulk cooking day. Have you done this and if so how did it work?
