Everyone needs a group of friends who inspire you in new and unique ways. I have my frugal friends, my creative friends, my “iron sharpens iron” friends and I even have ladies who continually challenge me in wonderful ways to eat real, whole food. Now, I’ll never cross over to a completely whole food, all the time diet, but I sure know it’s best.

When these ladies gathered together to celebrate the birthday of my whole food friend lover, one of our girlfriends blessed her with this beautiful fresh fruit creation.

She definitely didn’t sacrifice a traditional birthday treat just because she’d prefer to eat her kind of “cake” in its truest form.

I love this Fresh Fruit Cake alternative because so many are eating Vegan, Paleo, Gluten Free, Dairy free, as well as giving the Whole 30 experiment a try, and this allows the cake tradition to continue.

Personally,  this is the perfect option for when I choose to follow my 17 day diet. You sacrifice none of the festivities with this beautiful cake.

 Another Paleo eating friend, who has lost SO much weight it’s just unbelievable, enjoyed the fruit cake below with coconut butter used as the frosting and slivered almonds as the “sprinkles.”

The possibilities are endless. There are so many fun ideas that can come from one simple watermelon and additional fruit?

Decide on your own variation based on favorite fruits, as well as how much detail you wish to add. Gather your  fruits to adorn the sides, and let your creative juices flow.

The trickiest part is cutting the whole watermelon in the shape of a “cake.”  Make sure you purchase a seedless variety. The size you choose will be dependent on how many people you are serving, but you may want to choose a medium sized melon if this is your first attempt.
To begin, lay the watermelon on its side. With a large sharp butcher knife, cut both ends off to form straight edges. Then turn the watermelon upright so that it is sitting flat sides up and down. You should now have almost a box look. Carefully trim off the rind so that it resembles the smooth, straight curve of a round cake. If layering with the cantaloupe, follow the same directions to shape the cantaloupe.
Use mini cookie cutters to cut varying shapes and arrange strawberries, pineapples, strawberries, blueberries, kiwi and other fruits however you wish atop the cake and around the bottom. If preparing in advance, garnish with strawberries and black berries right before you serve the cake to preserve their freshness.
Cover and refrigerate until ready to serve.
