Love this delicious egg bake

As so many of you know, welcoming you into my kitchen is one of my greatest joys. Not because of the food we are going to enjoy together, but because of what’s going to occur while we’re breaking that bread together.

Earlier this year, the video team from (in)courage came to my home to shoot this fun mason jar craft for our upcoming inrl event. While they were here, we decided to be spontaneous and do a few food videos too. They shared it on (in)courage, so I thought you might like a sneak peek too. Yes, it’s just basically me chit chatting with you in my kitchen – unrehearsed, unedited, so join me. If we can’t sit on my front porch together, this is the next best thing. As music floats in the background and we hum along to “It’s the Most Wonderful Time of the Year,”  we determine to embrace this season of joy, yet often, holiday menus can bring a sense of dread. 

Our desire is to fling the doors wide open and welcome friends and family from afar, but the many fine details add up, leaving us with a sense of worry, not wonder.

For years now, I’ve been hosting large groups of people in our home and I’ve collected a repertoire of recipes that eliminate stress with their ease of preparation, yet continually amaze us with their deliciously simple ingredients.

My mantra for this busy month is “Less time around the stove, more time around the table.” I want to enjoy the community that occurs when we’re gathered, so if you are scrambling for an easy, yet melt in your mouth, brunch dish, look no further. I’d love for you to pour yourself a cup of coffee, watch the video with me and we’ll share a little time of community and recipe bonding. 🙂

Since I’m actually a city-suburb girl turned county, I’ve had my own chickens, which means my own, fresh eggs. Over the years I have experimented with a LOT of egg dishes and this one is always a top request. It’s so easy to whip together, yet it is one of those creamy and rich egg dishes.

Last month, I spoke at a conference and one of the attendees rushed up to me exclaiming, “That elegant egg dish of yours has saved me at so many of my MOPS meetings.”  I knew exactly what she meant!

For my family, I serve this without any topping, but if you want to dress up this recipe and present it with a five star reputation, serve in squares with a dollop of sour cream and a drizzle of raspberry sauce for a touch of gourmet.

If you would like to serve a Veggie option, try my Chili Cheese Egg Puff or my Veggie Egg Casserole packed with garden vegetables. Served alongside with our favorite Cracker Barrel Hashbrown Casserole and Overnight Cinnamon Rolls, you are set to feast on easily prepared comfort foods.
